Fennel and apple coleslaw.

Time: 20 minutes

Ingredients:

Half a medium red cabbage, thinly sliced

1 fennel bulb, shaved

5 radishes, shaved

4 spring onions, thinly sliced diagonally

2 apples, cored and thinly sliced

Dressing:

80ml (⅓ cup) plain yogurt

80ml (⅓ cup) cup mayonnaise

15ml (1 tbsp) fresh lemon juice

10ml (2 tsp) mild mustard

Coarse salt and freshly ground black pepper, to taste

Method:

1) Place the vegetables and apple in a serving dish.

2) Whisk the dressing ingredients until well mixed.

3) Pour over the salad, toss to coat well and serve.
