Ingredients:
15ml (1 tbsp) olive oil
250ml (1 cup) thinly sliced onion
15ml (1 tbsp) butter
30ml (2 tbsp) brown sugar
15ml (1 tbsp) balsamic vinegar
400g puff pastry
200g goat's cheese, crumbled
6 figs, sliced
Method:
- In a heavy-based pan, heat the oil and saute the onion over a low medium heat. Cook gently for 10 minutes until soft and translucent. Add the butter, sugar and balsamic vinegar. Continue to cook over low heat, stirring frequently, for 20-30 minutes until the onions are very soft, caramelised and jam-like. Set aside to cool.
- Preheat oven to 180°C.
- Roll out the pastry, according to package instructions, and trim and shape into a 20cm diameter circle on a baking sheet.
- Spread the onion mixture on the pastry base and top with most of the goat's cheese, sliced figs and more cheese. Crimp the edges in about eight places.
- Bake for 20-25 minutes, until golden and crisp.
