Serves: 8

Burger patties:

1kg beef mince, not too lean or the hamburgers will be dry

1 onion, finely grated

1 clove garlic, crushed

125ml (½ cup) fresh breadcrumbs (not dried)

125ml (½ cup) grated cheddar cheese

30ml (2 tbsp) tomato sauce or BBQ sauce

10ml (2 tsp) soya sauce

1 egg, lightly beaten

Salt and freshly ground black pepper

Other ingredients:

Hamburger rolls

Butter

1 red onion, sliced

2 large pickled gherkins, sliced

2 tomatoes, sliced

Mayonnaise, optional (or another sauce of choice)

Method:

  1. In a large mixing bowl combine all the ingredients for the burgers, then shape into eight patties. Place on greaseproof paper and refrigerate until ready to cook; this helps to keep the patties together.
  2. Preheat a non-stick pan with a splash of oil. Fry half of the burger patties for 3-4 minutes per side, turning carefully without breaking. Remove and rest, covered with foil. Repeat with remaining patties.
  3. Split and butter hamburger rolls. Place a pattie on the bottom half of each roll and top with onion slices, pickled cucumber and tomato. Add sauce and top with the other half of the roll. Serve with chips and extra sauce on the side.
