Ingredients:
30ml (2 tbsp) olive oil plus extra
1 large red onion, sliced
1 bunch spring onions, finely sliced
30ml (2 tbsp) balsamic vinegar
15ml (1 tbsp) brown sugar or preferred sweetner
Salt and freshly ground black pepper
2 ripe avocados, halved and pitted keeping them in their skins
6 Portuguese rolls or other bread rolls or even pita
1 lemon, halved
Handful of sunflower seeds, toasted
Cayenne pepper or chilli flakes
Coarse salt
Method:
- Heat the oil in a small pan and fry the onion and spring onion over low heat until soft.
- Add the balsamic vinegar and brown sugar and cook till caramelised. Season and set aside to cool.
- Spray a griddle pan with cooking spray and preheat till piping hot.
- Brush the avocado halves with olive oil and place cut-side down in the hot pan. Cook for 30-60 seconds, no longer, as the avocado can become bitter. Remove and set aside to cool, then remove the skin and slice.
- Split the rolls and brush lightly with olive oil and place oiled side down on the hot griddle pan to toast for a minute or two.
- Top each bottom of roll with a heap of caramelised onion and arrange the avocado on top of the onion.
- Squeeze over lemon juice, sprinkle with sunflower seeds and season with cayenne pepper and a light sprinkling of coarse salt.
- Top with other half of the roll and serve.
